A cheese whose characteristics vary throughout its maturing process. Fresh Caciocavallo Ibleo is known for its intense flavour, but also its sweetness. It can be served on a slice of fresh bread or, alternatively, as an appetizer together with a good board of cold cuts and cheeses. It is also possible to grate it on starters.
