Its sweetness embraces the roughness typical of Sicilian salami, creating a perfect mix of flavors. Pistachio salami is obtained through the use of fresh meat of the highest quality, which, after being de-boned, is cut by hand by the point of a knife. Thanks to the uniformity of the natural cow casings, this sausage takes on a fairly regular cylindrical shape, and thanks to the maturing process which takes place naturally in ventilated environments for about 20 days, a whitish outer layer develops, which is typical of this artisan product.
With the addition of pistachio from rigorously selected Sicilian farms, this Guidara sausage takes on characteristics that make it inimitable, and prized for its particularity and flavour.
How to eat it:
Pistachio salami should be cut with a knife with a smooth blade; it has an extraordinary and refined taste,mainly due to the influence of the particular microclimate of the valley on the seasoning, but also to the balanced presence of salt and pepper, which contribute to the enrichment of the flavour of this sausage.
It can be matched with young, sweet, medium bodied and fruity red wines.
