The flagship of Guidara’s production is SANT’ANGELO Salame PGI, protected by the “Consorzio Tutela Salame S. Angelo” and guaranteed by the “Ministry of Agriculture, Food and Forestry”.
Today it is the only Salame with a guaranteed brand in the Sicilian Region.
S. Angelo Salami has a very ancient history, and still today the Guidara Company produces it artisanally, using the ingredients of the age-old recipe: Pork, sea salt, black pepper and nitrate.

It is an extraordinary product with an inimitable taste, due to the balanced presence of salt and pepper which enrich the flavour of the sausage. It can be matched with young, sweet, medium-bodied and fruity red wines. The high-quality standards achieved by the company and the undisputed organoleptic qualities of “S.Angelo Salame PGI”, produced by “Guidara Salumi”, make this sausage “a unique sausage” that continues to give consumers the pleasure of the genuine and the rediscovery of tastes of the past.
S. Angelo Salami PGI, is obtained with the use of fresh meat of the highest quality that is boned and cut by hand by the point of a knife. Since the meat is stuffed into natural pork casings (gently), the finished product takes on an irregular cylindrical shape, and after natural aging for about 30 days, a whitish outer layer develops, typical of this sausage.
S.Angelo Salami PGI must be cut with a smooth knife; it has an extraordinary and inimitable taste, due above all to the influence of the particular microclimate of the valley on the seasoning, but also to the balanced presence of salt and pepper which contribute to the enrichment of the flavor of this sausage.
It can be matched with young, sweet, medium bodied and fruity red wines.
