Pancetta is obtained by using part of the belly of fresh, highest quality pigs, then salted, massaged and flavored with natural aromas and spices. Once the preparation phase is completed, the bacon is stretched, or tied by hand in case of rolled bacon.
The aging takes place naturally in ventilated rooms for about 30 days.
How to consume it:
Pancetta is a product with a timeless taste, above all due to the influence of the particular microclimate of the valley on the maturing process, but also to the balanced presence of salt and black pepper (or chilli pepper), which contribute to the enrichment of its flavor.
It can be matched with young, sweet, medium-bodied and fruity red wines.
Pork belly (origin: Italy/CE), salt, (black pepper -1%), (red chili pepper 1%), spices, dextrose, sucrose and flavoring.
