Sacrifice, passion and continuous research, together with careful application of the product specification have allowed DONNA ANGELICA to express hemical-organoleptic parameters of absolute excellence, officially recognized with the certification of PROTECTED GEOGRAPHICAL INDICATION (SICILY).
Donna Angelica is the fruit of the pressing of olives only grown within the family farm at an altitude ranging from 800 to 900 meters with south-south/east exposure in medium-textured soils. A unique and unrepeatable blend that contains within it 9 of the main Sicilian varieties. The olives are strictly harvested by hand and pressed within 12 hours by cold-working, in plants of the latest generation. Donna Angelica is then immediately filtered and preserved in stainless steel containers, in a temperature-controlled environment and in total absence of oxygen, thanks to the use of nitrogen to preserve all the organoleptic characteristics.
It enhances fish dishes such as grouper fillets with cherry tomatoes, salads, bruschette, crostoni. Excellent also on white and delicate meats. Perfect for gourmet pizzas in Sicilian tradition.
Hints of ripe citrus, grapefruit, lemon, pine nuts, apple and vegetal accents of artichoke.
Soft and fluid. The support of the phenolic note is very important, with spicy and bitter present in great balance, but not incisive in the intensity.
