Like all provolas, it is characterised by its elongated pear shape and ball-shaped head, which are due to the aging process, during which the cheeses are hung with a string. Matured provola differs from fresh provola because of its size (it can also reach 6 kg) and, above all, because of its taste, which becomes more intense and spicy during the maturing process.
It perfectly matches with a wide range of typical Sicilian pickles in oil.
